Sauteed Bacon Tomato Green Beans

Refreshing and so good!

Prep time: 10 minutes

Cook time: 10-12 minutes

Yield: Serves 4


INGREDIENTS

1 lb fresh green beans, ends snipped

4 slices thick cut bacon

2 garlic cloves, minced

1/2 cup cherry tomatoes, sliced in 1/2 (can add more if you would like)

Fresh black pepper

 


INSTRUCTIONS

In a medium sauce pan, fill with water and bring to a boil. Blanch the green beans for roughly 5 minutes.

In the meantime, in a large skillet, cook the 4 strips of thick cut bacon. Once crispy, pull them out of the pan on to a cutting board lined with a piece of paper towel. Chop up the bacon into small pieces. Leave the bacon fat in the pan! It is free flavor!

Once green beans are blanched, with a slotted spoon or tongs, remove from water and put directly into skillet with bacon fat. On medium heat toss the green beans. Add the minced garlic, chopped bacon and a little fresh pepper. Cook for roughly 3-4 more minutes, tossing a few more times. Add the halved cherry tomatoes during the last 2-3 minutes and toss. Just to warm them through.
