Quinoa Arugula Salad

Something quick and light for lunch or dinner!

Prep time: 10 minutes

Cook time: 20-25 minutes

Yield: Serves 4


1 cup Quinoa, cook according to directions (can even make it the night prior)

1/4 cup pomegranate seeds

2-3 cups fresh arugula

1/2 lemon

2 tablespoons olive oil

Pinch of Kosher salt



Cook quinoa according to package and set a side to cool or make it the day prior and store in the fridge.

In a large bowl add the arugula. Squeeze a half of a lemon over the arugula, drizzle two tablespoons of olive oil, and add a pinch of Kosher salt. Gently toss till arugula is coated lightly.


Add in the pomegranate seeds and slightly toss. In a bowl add a few scoops of your Quinoa, the add your arugula salad. Mix if you feel like it or eat it as separates! Super easy and so good for you!
