Some so simple to make and awesome for lunch or dinner!

Yield: Serves 2
INGREDIENTS
Marinade/Sauce:
1/4 cup soy sauce
2 tablespoons Lime Juice
2 teaspoons brown sugar
2 tablespoons extra virgin olive oil
1 teaspoon dark sesame oil
3 cloves garlic, minced (about 1 Tbsp)
¼ teaspoon ground ginger or 1 tablespoon fresh ginger
1/2 teaspoon sesame seeds, doesn’t need to be toasted for sauce
2 tablespoons chopped peanuts, optional
Shrimp:
1 pound 16-20 count shrimp, peeled and deveined
1 Tbsp sesame seeds, toasted
INSTRUCTIONS
Marinate the shrimp: In a medium bowl whisk together the soy sauce, lime juice, and brown sugar, olive oil, sesame oil, minced garlic, and grated ginger. Place the shrimp in the bowl with the marinade. Toss to coat with the marinade and chill until ready to cook.
Toast sesame seeds: If you haven’t already done so, toast the sesame seeds in a small sauté pan on medium high heat until lightly browned.
Heat pan to medium heat. Add shrimp and all the marinate to the pan. Cook for 8-10 min or until shrimp is done.
Add your rice to your bowl. Use a tong to add your shrimp and a spoon to add the sauce over your shrimp and rice. I love sauce so I tend to use a lot!
Sprinkle the shrimp with toasted sesame seeds and peanuts!
Serve immediately with rice, soba noodles or rice noodles! I tend to love rice!
