Fried Egg & Zucchini Breakfast Bagel

Quick & healthy breakfast!

Yields: 1 serving


Ingredients: 

1 organic egg
1 slice of cheese of your choice (I used Havarti)
2-3 zucchini slices, sliced thin
splash olive oil
1 mini bagel
spinach; optional
pinch of kosher salt & pepper


Directions: 

In a saute pan, drizzle very little olive oil. When it gets a little warm crack your egg slowly and put into the pan. Cook for 3-4 minutes, or until it the way you like it. You can use egg whites only also if you want to make it a bit healthier.

While the fried egg is cooking place the 3 slices of zucchini into the pan and sprinkle a pinch of salt and pepper over the slices.  Cook for the same amount of time as the egg, until golden brown on each side.

Toast your mini bagel till golden brown. Add your slice of cheese, optional spinach, fried egg, zucchini slices and a little salt and pepper. Either eat it open-faced to cut out carbs or throw on the top and enjoy!

Super simple, and a quick healthy breakfast before work!
