A beautiful refreshing cucumber salad! So good and pairs well with anything!

Yields: 4 servings
Ingredients:
1/2 cup plus 2 tablespoons unseasoned rice vinegar
2 tablespoons soy sauce
4 teaspoons sugar
4 teaspoons sesame oil
2 English cucumbers, thinly sliced on a mandoline
Directions:
Combine the vinegar, soy sauce, sugar, oil and 1 tablespoon water in a medium bowl and whisk to combine.
Add the cucumbers, cover, and let marinate in the refrigerator for at least 1 hour. Serve chilled.
