Who doesn’t love caramels! Quick & Fancy!
Prep: 5 min
Microwave: 7 min
Servings: 24 depending on the size you cut
Ingredients:
½ cup salted butter
1 cup sugar
½ cup light corn syrup
½ cup sweetened condensed milk
1 teaspoon vanilla
1 teaspoon of Kosher salt
INSTRUCTIONS
Line an 8×8″ pan with parchment paper. Run a stick of butter over the top to prevent the caramels from sticking. Set aside.
Melt the butter in a large 8-cup microwave-safe bowl. This is VERY important! Or it will bubble over and make your microwave a mess! (Trust me lol I know)
Add the sugar, corn syrup and sweetened condensed milk and stir until smooth. Place in the microwave and cook for seven minutes, stirring half way through.
Note: To test if the caramel is ready, place a spoon into the caramel and then dip into a cup of cold ice water. If it resembles a soft ball then it’s ready. If it’s still too soft, cook for an additional 30 seconds to 1 minute. You don’t want to overcook or they will be too hard.
Then remove from microwave and stir in vanilla.
Pour caramel into your lined pan and allow to set for 30 minutes. Sprinkle with Kosher salt.
Cut with a plastic knife and then wrap in wax paper to prevent the caramels from sticking and you can pass them out to your friends and family! Super fancy and simple!
Enjoy! 🙂
