Ingredients:
1 head cauliflower (about 2 pounds), cut into bite-size florets (about 8 cups)
1/4 cup extra-virgin olive oil
½ cup panko bread crumbs
Pinch of salt & pepper
parsley, for garnish
Directions:
Preheat oven 450’F
Cut up the cauliflower and place in a gallon ziplock bag. Add the olive oil and toss.
Place the cauliflower onto a baking sheet. Sprinkle with kosher salt and pepper. Sprinkle the ½ cup of panko breadcrumbs over the top of the cauliflower.
Place in the oven and bake for 18-20 min, until golden brown.
Sprinkle with parsley for garnish and serve.
