Chocolate Pudding Pie

Super simple chocolate pie! When you’re having a chocolate craving this is a must try!

Yields: 8 servings


Ingredients: 

1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 cups whole milk
4 egg yolks, beaten with a fork
6 1/2 ounces bittersweet chocolate, broken into pieces
2 tablespoons butter
2 teaspoons vanilla
1 baked pie shell (store-bought is fine)
Optional toppings: whipped cream, hot fudge sauce, caramel sauce, chopped walnuts, raspberries and sprinkles


Directions:

In a large saucepan over medium heat, stir together the sugar, cornstarch and salt. Pour in the milk, then the beaten eggs.

Cook, stirring, until the mixture comes to a boil. Remove from the heat and add the chocolate, butter and vanilla.

Stir until the chocolate is all melted. Pour into the baked pie shell and chill in the fridge for several hours until set.

Serve plain or serve topped with everything!

NOTE: With any left over pudding filling you can fill mini mason jars and cool them. Top with whipped cream and caramel or chocolate for an extra dessert after dinner! (See the little jars below!) Great snacks for the kids too!
