Who doesn’t love a healthy melt?!?!

Yields: 4 servings
Cooking Olive Oil spray
8 slices of bread of your choice
1 large can of all white meat chicken breast, drained and warmed
1- 1 1/2 Avocado, sliced
1 Roma tomato
Butter leaf lettuce leaves
8 slices Havarti cheese or whichever cheese you prefer
Salt and pepper to taste
In a large bowl, add the chicken, avocado, salt and pepper. Mixing using a fork until combined.
Place a slice of bread on a cutting board. Put a slice of Havarti cheese, a layer of the chicken mixture, a tomatoes slice, leaf of lettuce, and another slice of Havarti cheese. Put the top slice of bread on the melt.
In a large skillet, spray a thin layer of olive oil spray. I don’t prefer to use butter as this is a healthier way to toast the bread without the added fat. Place your melt into the skillet over medium heat. Cook for 4-5 minutes on each side, or until the bread looks toasted and the cheese is melting.
Remove from the skillet and place on a plate for 1-2 minutes to cool a bit. Slice in half.
Repeat for remaining melts you are making.
