Something different for a side, with a nice refreshing note from the lemon and a nice crunch from the cashews! Super yummy!

Ingredients
1 head broccoli (large; /2 pounds)
¼ cup extra-virgin olive oil
Kosher salt
freshly ground pepper
½ a lemon
¼ cup parmesan cheese
¼ cup cashews
Instructions
Preheat the oven to 400°.
On a large baking sheet, toss the broccoli florets and stems with 2 tablespoons of the olive oil and season with salt and pepper. Roast the broccoli in the oven for about 22 minutes, tossing halfway through, until browned. Pull out and sprinkle on the ¼ cup of parmesan cheese and the ¼ cup of cashews. Cut a lemon in half and put the half of lemon face down on the backing sheet. Pop back in the oven for 7-8 minutes.
Scrape the broccoli into a bowl, make sure to get all the crispy parm bits from the bottom of the pan. Squeeze the half of lemon on to the broccoli, toss well and serve. If you want it less citrusy do NOT squeeze the whole thing.
