The Best Rhubarb Cake EVER!

My co-worker Renee makes this cake for our office! It is amazing! I don’t even know if I like rhubarb but this cake is phenomial!

Total: 60 min
Bake: 35 min
Yields: 12-24 servings


Ingredients:

CAKE
½ cup shortening
1 ½ cup sugar
½ tsp salt
½ tsp vanilla
1 egg
1 cup milk
1 tsp baking soda
2 cups + 1 tbsp flour
3 cups rhubarb (cut fine)

TOPPING
¾ cup brown sugar
½ cup chopped nuts
¼ tsp cinnamon


Directions:
Preheat oven to 350’F.

Cream shortening, sugar, salt, and vanilla. Add egg, milk, baking soda, flour, and rhubarb. Pour into greased and floured 9×13 pan. Mix brown sugar and cinnamon. Sprinkle over cake batter and add nuts.

Bake at 350’ for 45 minutes. Check cake at 35 minutes. If desired, add more brown sugar for topping.
