Total: 1 hour 10 min
Cook: 55-60 min
Yields: 1 large loaf or 4 mini loafs
Ingredients:
1 1/2 cups of all-purpose flour
½ cup granulated sugar
2 to 3 very ripe bananas, peeled
1/3 cup butter, melted
1 teaspoon baking soda
1 large egg
1 teaspoon vanilla extract
Salt
Directions:
Preheat the oven to 350°F
Grease a large bread loaf pan or mini loaf pan, which ever you prefer.
In a large mixing bowl, whip the ripe bananas with a fork until completely smooth or use an electric Kitchen-Aid mixer with the whisk attachment.
Dump the melted butter into the bowl with the mushed-up bananas.
If you are using an electric mixer like I am, please switch to your paddle attachment. If not then use a wooden spoon to mix in the baking soda and salt.
Mix in in the sugar, beaten egg, and vanilla extract.
Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour until your toothpick comes out clean when you test it in the center.
Remove your bread from oven and let cool in the pan for a few minutes. Remove it from the pan and serve it warm or totally cooled.
Enjoy!
