Yields: 2 wraps
2 teaspoons olive oil
1 teaspoon apple cider vinegar
1 pinch cumin
1 ½ cup kale leaves, chopped
½ cup canned white beans, rinsed and drained
2 whole-wheat tortillas
2 oz soft goat cheese, crumbled
In a bowl, whisk together oil, vinegar, and cumin. Season with salt and pepper.
Add kale and use hands to massage dressing into kale until leaves start to soften, about 2 minutes.
Add beans and use hands to mash beans slightly into kale.
Arrange kale-bean mixture in center of tortilla.
Top with goat cheese. Wrap tightly.
