Ingredients:
4 6-inch whole wheat tortillas
Olive oil spray, for oiling tortillas
2 tablespoons sundae caramel
Cinnamon & sugar mixture
1 tablespoon of butter
1 small apples, cut into thin sticks (or use left over apples from Ham, Apple & Cheese quesadilla recipe)
Lemon juice and ground cinnamon for tossing
Directions:
Toss the apples with lemon and juice and cinnamon to taste.
Spray 2 of the tortillas with cooking spray (or brush with olive oil). Lay the oiled tortillas oiled-side down in a large skillet. Drop 1/2 tablespoon of butter in the middle of the tortilla. Put half of the apple mixture on the tortillas all spread out. Drizzle with half the caramel and sprinkle with cinnamon and sugar. Put on other half of the tortilla and firmly press down.
Cook until golden brown, about 2-3 minutes on each side. Repeat with the remaining quesadillas.
Cut the quesadillas into 4 wedges and arrange on plates. Sprinkle with more cinnamon and sugar, drizzle with caramel and top with whip cream!
