- Ingredients:
- 6 tilapia filets, rinsed & patted dry
- 1/2 cup olive oil (can use avocado oil or chili oil)
- 1/2 teaspoon garlic powder
- 2 tablespoons lemon juice
- 1 cup garlic or Italian Panko breadcrumbs
- 3/4 teaspoon Old Bay seasoning
- lemon wedge
- Directions:
Heat oven to 375′. Spray a baking pan lightly with cooking oil.
In a shallow dish, combine olive, garlic powder, and lemon juice. Ina separate shallow dish, combine Panko and OldĀ Bay seasoning.
Dip each filet in butter mixture, then roll well in the Panko mixture. Place filets in a single layer onto prepared pan.
Bake 12-15 minutes, until flaky. Serve with lemon wedges.
Simple Light Arugula Salad:
Ingredients:
1 bag of arugula salad mix
drizzle of olive oil
drizzle of red wine vinegar
1/2 a lemon
salt & pepper
- Directions:
This is a super simple recipe. Take a handful of arugula salad mixture and place in a bowl. Drizzle with olive oil, red wine vinegar and a squeeze of lemon and toss. Sprinkle with salt and pepper.
This is just a simple refreshing salad to complement the Tilapia. Great served with a nice white wine. (J. Lohr Chardonnay 2016)
